-Savory Baked Salmon

Note:  Marinating this in the refrigerator for about an hour really does add more flavor.
Also, to check for bones, take a bowl (like a cereal bowl), turn it upside down, place the salmon fillet on top of the bowl, skin side down,
if there are any bones, the bones should stick out.

This recipe is for 2 servings, can be easily doubled.

 

Savory Baked Salmon

 

-1/4 teaspoon minced garlic (or 2 cloves garlic, minced)
-6 tablespoons light olive oil
-1 teaspoon dried basil
-1 teaspoon salt
-1 teaspoon ground black pepper
-juice of 1 lemon
-1 tablespoon fresh parsley, chopped
-2 (6 oz.) salmon fillets
-Aluminum foil

 

In a medium bowl, prepare marinade by mixing together the first 7 ingredients, with a whisk.  Place salmon fillets in a gallon size zip lock bag, and pour marinade over.  I like to place the bag in a glass dish in the refrigerator, just to make sure the marinade doesn't leak.  Marinate for about an hour in the refrigerator, turning occasionally.

Preheat oven to 375° F.

Place fillets in aluminum foil, cover with marinade, and seal.  Place sealed salmon in a glass dish, and bake 45 minutes, until easily flaked with a fork.
