-Pimiento Cheese

 I love Pimiento Cheese sandwiches!  But I don't like the Pimiento Cheese that you can buy already made. Yuck!
The secret to great Pimiento Cheese is to make it "the old fashioned way!"
Don't buy cheese that is already shredded. 
Shred the cheese with a "stand up" grater, not a food processor.
Mix it together with your hands, not a mixer or a spoon.  I like to use disposable gloves for this.
  
 

 

Old Fashioned Pimiento Cheese 

-1 pound block of your favorite Cheddar Cheese  (I use Publix colby long horn cheese)
-7 oz. jar of diced pimientos  (or two 4 oz. jars)  (Make sure you get "diced.")
-1/2 cup of your favorite mayonaise  (I use Blue Plate)



Shred the cheese with a stand up grater, use the side with larger holes.  Put in a deep bowl.  Pour in pimientos, juice and all.  Then add mayonaise.  Mix together with your hands.  Enjoy!
