-Fluffy Pancakes

My attempts at making pancakes in the past
has resulted in a trash can full of "burnt sacrifices", as Dave puts it.
Until now!
This is an easy made from scratch recipe.
I keep two skillets going at a time.
Or if you have a griddle, even better!
This recipe makes 6 nice size pancakes.

  Fluffy Pancakes

-  3/4 cup milk

-  2 tablespoons white vinegar

-  1 cup all purpose flour

-  2 tablespoons white sugar

-  1 teaspoon baking powder

-  1/2 teaspoon baking soda

-  1/2 teaspoon salt

-  1 egg

-  2 tablespoons butter, melted

-  Pam cooking spray, butter flavor

-  Optional toppings (Syrup, strawberries, blueberries, whipped cream, have fun!)

Directions

     1.  Combine milk with vinegar in a mixing bowl and set aside for 5 minutes to "sour".

     2.  Combine and sift together flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.

     3.  Whisk egg and butter into "soured" milk.

     4.  Pour the wet ingredients into flour mixture and whisk until lumps are gone.

     5.  Heat a large skillet (or 2 skillets) over medium heat, and coat with cooking spray.

     6.  Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface.

     7.  Flip with a spatula, and cook until browned on the other side.

     8.  Don't walk away, as they cook very fast!!!
